Keeping Pikachu happy is easy - keep it in your party and make sure its HP doesn't get too low. If you turn towards Pikachu you can check its mood. Note that if you trade your Pikachu with someone, it will cease to appear on the map screen. Like in the TV series, Pikachu doesn't like to rest in a Poké Ball and prefers to follow you around at all times.
